Officially -- no.
Unofficially, meaning are people using Capture One Pro with the current version of macOS -- yes.
It takes Capture One (the company) time to test Capture One (the program) when a new version of an OS is released. Or perhaps they simply wait until some number of users are running on the new OS without reporting new errors. I don't know. In any case official recognition of OS support is always delayed by some amount of time. That doesn't stop many users from updating, anyway.
I, too, don't understand what "use the catalog as a session" means. I use both catalogs and sessions with Capture One 21 running on macOS 11.2.1. It works for me. That doesn't guarantee it will work for you.

par l'expression 'comme une session' je veux simplement dire que mon catalogue physique (disque externe contenant les RAW) doit être connecté pour que le catalogue de traitement des RAW CO(.cocatalog) fonctionne.
sinon plusieurs fonctions ne sont pas opérationnels.(enfin chez moi)traduction Google :
