Sessions Folder Mangement
When I establish a new session in Capture One 21, the capture, sessions and output folders remain defaulted in another session.
I would like to have the session folders active for the session that is open, to me this is the logical default.
Is there a way I can make this happen?

Normally the Capture, Output, Selects and Trash folders will default within the session.
It is possible to change the default for each folder to point to a different folder giving you manual control.
However that is also usually Session by Session.
Are you by any chance using the Session Template option when creating a new Session?

Good Question SFA.
I create a new session by keystroking 'command N', enter the title and select 'OK'.
Is there another way?

Unless there is a difference between the Mac and a Windows system (possible but unlikely here I think) the third line of the box that opens up (Session name being the first line) should be
Template:
Does it show "Blank" or something else?
Even if it shows "Blank" click on the three dots at the end of the row and open the Template finder window.
Blank should find nothing. If it offers a template file called blank there will be some digging to do.
If you actually find a real live template create the new session (temporarily for now) .
In the new session go to the Library tool.
For each of the "Session folders", highlight them one at a time, right click and then use either or both of "Find in Library" and "Find in Explorer" (or Mac equivalents to my Windows options) and discover where those virtual folder names are actually referencing.
The answers to that will guide the next steps, one way or another.
