Can't reset nor redirect processing folder

I use the localized German version of CaptureOne 21 in the latest version for Mac M1. Since the update I am not able to choose and change the processing folder. I can't even reset the tool. A setting I used as an export folder stays as default and is unchangeable.

Is there something I am not thinking of or is it a bug?
