Soft Proofing
I have traditionally done my soft proofing in Photoshop, but decided to try it in CaptureOne. I created an export recipe (which I assume was called a process recipe prior to recent changes) that includes my paper icc profile. I then added Proofing to my Toolbar. In Proofing, I select my export recipe. Unlike Photoshop, out of gamut colors don't turn gray. I see no differences when I turn Proofing on and turn it off. The files I am working with are very saturated and colorful (race cars with glossy finishes). In Photoshop, I get a lot of areas that are out of gamut, but nothing ever changes in CaptureOne from Proof Off to Proof On.
Am I doing something wrong, or does Photoshop overreport out of gamut colors, with the degree of out-of-gamut being imperceptible? So far the prints match what I see on the screen, but I would feel a lot better if I saw the differences that Photoshop suggests are present.
Version 14.3.0.260.

Hi Jack,
Did you check that in View (main menu) "Recipe proofing" is cross checked ?

Thanks. I checked to make sure that it is checked. I have made a bunch of prints, and so far so good. I will continue to monitor the situation.
Thanks again.

As a followup, is there a difference between process recipes and export recipes? From some of CaptureOne's comments following the recent changes to the export function and the complaints that followed, I wonder whether CaptureOne has changed the name of process recipes to export recipes. I was not a recipe user.
Thanks

Yes, they're now Export recipes. Also, the Exporter window is supposed to show the image with the Export Recipe applied. I think most (or all) of the complaints you've seen (including mine) are about how the new Exporter complicates the workflow compared with the old Process tools. The Exporter has some nice features, but it would have been much wiser to just add it instead of killing the old tools.

Adding a comment to the Abbott's one : Capture One realised that a lot of bugs and not user-friendly elements of this new "Export window" were introduced with this "improvement". They are thinking about releasing an update (14.4) late September.

Thanks for the update.

To Abbott:
Thanks for the clarification on process and export recipes.

I find the whole recipe proofing and Proof Profile to be extremely confusing. Someone needs to do a complete tutorial on printing from Capture One 21 since the new updates.
