Monochrome Tethering and Tiff

For best results, shoot Raw, Color and have Capture One convert to black and white (see below for tethered shooting). I tested both jpeg and Raw+Jpeg with 'Set Picture Control' set to Monochrome and the results were very harsh.  The raw file still has the color information but it is contrasty and not very appealing.  Set 'Set Picture Control' to Standard or experiment with Vived etc. Record in color and you have the color channels available to adjust the black and white version of the image.

Set up the Session, attached the D850 (unfortunately, the D850 must have the memory cards removed), Take the first image make any adjustment to the color image you may need. Open the Color Tool Tab (3 little circles one on to of two), Scroll to the Black&White Tool. Near the top of the B&W tool is a checkbox Enable Black and White, Click Enable Black and White and the image just taken will display in black and white.  Go to the Capture Tool Tab (camera icon) and scroll down to 'Next Capture Adjustments' tool. Under the Other dropdown controll select 'Copy From Last' if not selected.  This is the default value of Next Capture Ajustments. You still have the color information which allows for B&W tonal editing, adding or subtracting color saturation to change grayscale tonality.  The next images taken will have Black & White Enables checked. Great question, I had to give it a try first.

This applies to raw files. I also tested capturing a black and white jpeg with the D850 and the results were harsh with little latitude for adjusments.

Use the Export Tool Tab or Export window to create a Recipe that ouputs to TIFF.  Size, location where files is saved, resolution, file type (TIFF) can be setup as a recipe.
