Viewer Mode, Workspace
Note I am stuck at version 11 as I am on an older Mac that uses El Capitan 10.11.6
My workspace changed upon closing and reopening Capture One. It appears to be in full screen mode (although the View Menu shows Full Screen Mode as an option). ESC would not return me to my workspace with Tools on the Left and Browser with single column on the Right. There is a triangular arrow on the left that will temporarily display Tools as well as the bottom of the screen that will display browser at the bottom. Hitting the ESC key does nothing except trigger the sound that alerts you that it will not work.
Not sure why workspace changed when I reopened Capture One.
I got my Tools to reappear and stay on the left but my Browser is still temporary with the triangular arrow at the bottom. Actually I like this setup as it maximizes image viewing size while editing. I cannot get my Viewer Mode icons to show up in the tool bar or above my viewing area.
In general miffed on why and how my workspace changed and unable to have confidence in setting it up and having it stay that way.

One more thing - Layers were no longer visible, so I added Layers to my Exposure Tools Pallete - View > Add Tools to Exposure Tab. It placed Layers at the bottom and I like having them at the top, so I dragged Layers to the top of the Exposure Tools and my whole interface/workspace changed back to my original setup of Tools Pallete on the Left and Browser (sigle column) on the right. So I would sure like to know how to nail down my Workspace and keep it the way I want it.

Hi Fred,
Make sure to Allow Capture One to have full access on macOS (check that it is the current version of Capture One you are using that has the permissions in case you have multiple versions) - if this was not done in both locations mentioned in the article: Quit Capture One and restart your Mac afterwards.
Now remake your workspace from scratch: starting out with the 'Default' workspace from the menu Window > Workspace > Default, and modify from this.
Save your new workspace and check if the issue is solved.
