If you sort by date, it does in fact sort by date and time. When I use more than one camera on a shoot, then import the images into Capture One, and sort by date, Capture one intersperses the images from both cameras according to time.

Does that not happen to you.

What I also do, though, is rename the files. I rename on import anyway to a format like 2022-05-03-1234.NEF. (The 1234 is a 4 digit counter). If I have used more than one camera for a shoot, then with the images in date order, I batch rename them again in that way. They would show up in date order anyway in Capture One, but if I rename them again, they end up in date order in Finder too. (Or Windows File Explorer if you were on Windows.)

What it also shows is that the clocks on the cameras don't keep very good time. Sometimes they don't show up in quite the right order. What I try to remember to do is to sync the times on the cameras before I use them for the shoot.

Hi, what I usually do when I work with two cameras at the same time and I want to look at all images side by side at the (almost) same time from different cameras. I Import both camera images to different folders on my hard drive and inside in Capture One I create an album where I drop all images together from both camera and rename them like @Ian Wilson said by date and time plus number. Now all images will be shown in the right order together. If you want to separate them images visually by camera, just colour tag them or make a letter to the end of the nummber. I recommend to sync your camera with your computer or mobile phones app clock. I do with Nikon Camera Control – I think also possible via bluetooth apps.
