    RAW files are never black and white unless they're shot on a monochrome camera. You're most likely shooting with a style that is applied to the in-camera JPEG preview.

    In the import menu go to Adjustments and select "Include existing adjustments" or choose a Style which recreates the in-camera look you were using.

    That sounds like exactly the problem. I checked on "Include existing adjustments" and it didn't solve the problem. I'm guessing it's because I used a 5d markiii, which is an older model and must not record the style data in a way Capture One recognises.

    "Existing adjustments" don't - can't - include Canon specific in-camera adjustments like B&W: they aren't "existing" to Capture One.

    If you want to honour them, you need to use DPP. 

    Capture One's own guidance is quite clear about its purpose:

    Select the Include Existing Adjustments checkbox if you are importing RAW files that have already been worked on in Capture One.

    It’s because your “adjustments” are simply alterations to the way the in camera preview (which is a processed JPEG) looks.

    The RAW file itself is untouched which is why they come in with no adjustments.

    I recommend applying a Style upon import if you wish your images to come in looking similar to how they appear on your camera’s display.
