You should be able to change this setting in the camera settings menu, under the "shoot" menu option.

Not sure if this works for Nikon? Seems I can’t save my images on card while iPad tethering

I figured it out and it's now working. Thanks, Jack W

Connect camera - note the Canon icon with the gear icon lower right of screen - click the gear(settings) icon - scroll to shoot - scroll to save to - choose sd1 or sd2 + C1. Tada!

As to Nikons (the original question was about Canons) it may be that you can't. I don't do tethering, so I am no expert, but I do know that being able to tether and save to the memory card at the same time is dependent on the make of camera. Some can and some can't.
