My Z8 nefs are the same size and I have a 4k monitor.  I went with the stock M4 Pro.  32GB ram would be better but needed?  I can't say (yet).  Faster than my M2 laptop but that is a different benchmark.

What is the guidance? Get the ram you need then choose the processor.  I thought 24GB would be enough for me.

When masking & ai or making changes to slider with lot of layers . How much ram your pc using ? Does it struggle ? How many cores does it use ? Have you checked activity monitor ? I was thinking to go for m4 with ram if it use more ram then cores. If it more core then probably same as your stock m4 pro with 24 gb. I don’t want to spend too much as you know apple charge way too much for any upgrade .

On a multi layer image I never got above 21GB ram use and C1 using 273% cpu pushing sliders from min to max or triggering Auto Adjust.  This suggests ram over cores and that 24GB will be plenty.  I only had mail, calendar web browsers and activity monitor open with C1.  Processor and SSD speed might be considerations pointing to the M4 Pro ... they were for me.
